No bake Peanut Butter and Pretzel Rocky Road. Soft and squishy marshmallow combined with crunchy peanut, salty pretzels and creamy chocolate for a taste and texture sensation. Pretzels add an extra crunch to this already decadent yet easy to make peanut butter chocolate tiffin fridge cake.


22nd October 2020 is officially National Nut Day, a full 24 hours to celebrate everything nutty (just in time for my birthday on 23rd October!) For the ultimate ‘peanutty’ enjoyment, America’s famous SKIPPY® Peanut Butter is smooth, creamy and delicious. SKIPPY® Peanut Butter is available in Extra Smooth, ground especially fine so it melts in the mouth, or Extra Crunchy which contains large peanut pieces in a deliciously creamy mix. For this recipe it simply has to be SKIPPY® Extra Crunchy Peanut Butter with an added salty kick from pretzels and salted peanuts. Add in squishy marshmallow and bind it all together with creamy milk chocolate. It's an absolute match made in heaven. You don't even need to look up the flavor thesaurus to know the combination is going to taste awesome.

SKIPPY® Peanut Butter (RRP £2.40 per 340g jar) is available in Extra Smooth and Extra Crunchy varieties, which are currently available in major supermarkets including Sainsbury’s, Asda, Morrisons, Costco, Ocado and International section of Tesco.


SKIPPY® Peanut Butter and Pretzel Rocky Road

175g Salted Pretzels (divided into 150g plus 25g)
75g Butter
4 Tbsp Golden Syrup
150g SKIPPY® Extra Crunchy Peanut Butter
500g Milk Chocolate (divided into 400g plus 100g)
75g Mini Marshmallows
25g Salted Peanuts, roughly chopped

Line a traybake tin (approx 34cm x 20 cm) with greaseproof paper.
Remove 25g of Salted Pretzels from the bag and set aside, gently crush the remainder in the bag.
Melt the butter, golden syrup and 
SKIPPY® Extra Crunchy Peanut Butter in a heavy-based saucepan. Take off the heat and add 400g of the milk chocolate. Stir and return to a gentle heat to completely melt.
Fold the crushed pretzels into the melted chocolate mixture in the saucepan, then add the mini marshmallows.
Tip into your lined traybake tin and flatten with a spatula.
Melt the remaining 100g of chocolate in a microwave or over a bain marie and drizzle it over the top of the Rocky Road.
Sprinkle over the chopped salted peanuts and pretzels.
Refrigerate for at least a couple of hours or overnight.
Cut into bite sized squares and enjoy with a cuppa.
