1st March 2020 is officially a day for Peanut Butter Lovers, a full 24 hours to celebrate one of the world’s most popular spreads. As a huge fan of peanut butter this is one themed day I can most definitely get behind. For the ultimate ‘peanutty’ enjoyment, America’s original SKIPPY® Peanut Butter has a heritage which spans more than 80 years, is enjoyed by millions stateside and is now on UK supermarket shelves.

SKIPPY® Peanut Butter Breakfast Muffins are packed full of protein along with bran cereal and dried fruit making them the perfect way to start your day. Bite sized, super quick and easy to make and great fun for kids to help with. Ideal for a grab-and-go breakfast, mid-morning snack or afternoon treat. Depending on the capacity of your mini muffin tin you may have to bake them in batches. Alternatively you could use the mixture for regular sized muffins but increasing cooking time accordingly.

SKIPPY® Peanut Butter Breakfast Muffins
Make 36 Mini Muffins

200g plain flour
60g sultana bran flake, crushed
100g caster sugar
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
85g dried apricots, chopped
300ml milk
200g SKIPPY® Smooth Peanut Butter
1 large egg
1 teaspoon vanilla extract

Heat oven to 190°C/Gas Mark 5.
Grease 36 miniature muffin cups (depending on how many your tin holds you make have to make these in batches)
In medium bowl, combine flour, cereal, sugar, baking powder, cinnamon and salt; mix well.
Stir in chopped apricots.
In large bowl, beat together milk, peanut butter, egg and vanilla with electric mixer until smooth.
Fold in dry ingredients just until combined.
Spoon batter evenly into tin.
Bake 15 minutes or until wooden toothpick inserted in centres of muffins comes out clean.
Cool in tin for 5 minutes.
Turn onto wire rack.
