Meal Planning Monday - Can you believe its June?!

Sunday 2 June 2013
Seriously can not believe we are now into June. The year is just whizzing past. Only 5 more weeks of term left. Pretty much stayed on plan last week and had a great time on Saturday at the Taste of Grampian Food Festival and came back with a good haul of foodie goodies some of which have already been scoffed and others are being incorporated into this weeks meal plan. Bloggage from the event to follow later this week.
Monday's dinner of slow cooked beef oilves was going well until I forgot about the yorkies and they got somewhat burnt. Absolutely loved the sweet potato gnocchi but had to play about with the quantities a bit as the sweet potatoes were very wet in comparison to floury tatties. I reckon a combination of both would work well. Next time I need to put tine marks on one side and a thumb print on the other.
I've already blogged about the Asparagus Risotto I made with the aid of some stockmaking top tips from Nick Nairn. Do check them out if you missed the post. The BBQ was fired up on Friday for a fishy feast of salmon with brown sugar and soy sauce and prawns with pepper, paprika and garlic oil.
Getting in nice and early this month with my entry for the Nigel Slater Dish of the Month Challenge hosted by Farmersgirl Kitchen. Lots of lovely dishes to be found in last month's May roundup including my Chicken Skin Popcorn entry #DishOfTheMonth
As soon as I saw the Asparagus and Roquefort Tart recipe in The Observer I knew it was for me. The inclusion of a spoonful of coarsely ground pepper in the pastry is amazingly good and I'll certainly be utilising that in other tarts. Whilst it was delicious served hot I actually preferred it cold for lunch the next day when the flavours seemed much more intense. Perfect alfresco food.
And so to this weeks #mealplanningmonday

Monday - Crab, Smoked Haddock, Leek and Parmesan Tart
Utilising some fishy purchases from the weekend to make one of my favourites.

Tuesday - Hot Honey Smoked Salmon Fishcakes
More Taste of Grampian fish from Macrae Foods of Fraserburgh being used to make these.

Wednesday - Haggis Toasties
Read about these on the Macsween Haggis blog this week and love what Deeny's are doing. Going to try and recreate my own with the aid of some insider secrets they've shared with me.

Thursday - Meatball Subs & Potato Wedges
Cooking these up as an entry for the Richmond Mini Meatball Hungry to Happy Challenge

Friday - Turkey Satay & Rice
Have some turkey stirfry strips languishing in the freezer which need used up so going to do something with them and some of Ria's Satay Sauce and some Coconut Cream.

Weekend - to be decided...
Boy is away at a Medieval themed Scout Camp all weekend and we have a couple of things on so its all a bit up in the air and there may well be eating out or take away involved.
Enjoy your week and as always check out the other #mealplanningmonday posts over at Mrs M's place. Big thanks to anyone who voted for me in the Capricorn Best Blog Award for May where I came second. Close but no cheese.
