Back from the Sun - Meal Planning Monday

Did you miss me? Been in sunny Tenerife for a week but now its back to reality. Old clothes, porridge and snow as opposed to 26 degree heat. We had a fantastic time. Great weather, hotel, food and drink. Will blog about it all later this week. Highlight, as you might have seen if you like my Facebook page, was a G&T bar in our hotel. Sunshine + Gin + Tonic = perfect holiday. 
Kids are off school for another week here and we are currently staying with my parents in The Black Isle for a couple of days to celebrate my Mum's Birthday and for the launch of the Eight by Eight art exhibition at Eden Court. This is a project very close to my heart which I've previously blogged about my involvement with. It was great to see all the hard work coming to fruition and my own Sweet Retro piece thankfully didn't look too out of place. The Daisy Patch mosaic tile that I've bought looked even more amazing in real life.
I was also lucky enough to win a raffle prize. Afternoon Tea for Two at Culloden House Hotel. Have up until March 2014 to utilise it and look forward to doing so next time we are up this way. The website promises "Assorted hand cut sandwiches, shortbread, fruitcake, homemade scones with cream & preserve, assorted cakes. Freshly brewed loose leaf tea or coffee. Relax and enjoy in front of the fire in our Adam’s Lounge or weather permitting, outside and enjoy a game of Croquet."

Woke up this morning to a real covering of snow. More White Isle than Black Isle. Went out for lunch to the Station Hotel in Avoch to celebrate my Mum's Birthday. Most of us opted for the Carvery which was undoubtedly the best I have had in a long time. Black Isle Roast Beef, Nairn Pork and Portmahomack Gammon keeping it local. Huge selection of veg (roast tatties, and sweet potatoes, broccoli cheese, red cabbage, spring greens, roasted carrots, onions and parsnips, mashed tatties) skirlie and yorkies and the best every gravy. Need to find somewhere as good as this closer to home.
Could someone please tell Mother Nature that its Spring?!
Will be having dinner here tomorrow night before we head for home. I believe its going to be Roast Chicken. I've just done an online shop to be delivered late tomorrow night. From a distance of 100+ miles and absence of a week I have absolutely no idea whats in my cupboards, fridge and freezer so its a rather looser #mealplanningmonday than normal for this week but will include the following...
Nigel Slater Pork Belly and Beans
Mushroom Stroganoff, Basmati and Wild Rice, Tenderstem Broccoli and Asparagus
Breaded Pork Escalopes, Baked Tatties, Cauliflower cheese.
Haggis, Mince, Neeps and Tatties
Pork Belly and Beans - hope this turns out as good as last time!

Have also ordered a leg of lamb and a whole chicken just in case. May end up eating out at some point during the week and foodie loon has a night out as do I so flexibility is the word of the week.

  1. It was seeing your Pork & beans on here the first time you posted about it that made me add it to my "must try soon" list (a list that has enough meals on it to last me until soon isn't soon any more!)

  2. Ooh yes the belly pork & beans is inspiring! Glad I've discovered your blog, just been looking at the post with all the baking you were doing for HomeStart training & been salivating over all the nummy things on there, will be trying one or two of them once I get back into baking :-)
