Mango, Pineapple and Coconut Tropical Smoothie Bowl

One of the topics of discussion when I was a guest on BBC Radio Scotland Kitchen Cafe last week was new year new recipes. We asked the question - what dish would you like to master this year? Answers ranged from basics like roast beef, omelettes and stovies to donuts, Thai curry and ravioli. This got me to thinking of my own foodie new years resolutions which are more along the lines of dishes I'd like to make for the first time. The list as it stands is as follows - macarons, smoothie bowl, bundt cake, gazpacho and baking a cake/something sweet in my slow cooker.


I reckoned I may as well strike when the iron is hot and make a start at what's probably one of the easier things to tick off the list - a smoothie bowl. Six months ago I didn't even know what one was! Basically its a thick smoothie, served in a bowl and eaten with a spoon. It's often decorated with fruit, cereals, nuts, seeds and suchlike. I made mine for breakfast and it certainly seemed much more filling than a regular smoothie. I reckon that's partly due to the thickness and the addition of toppings but also due to the fact that you have to sit down and take your time to eat it with a spoon.

Mango, Pineapple and Coconut Tropical Smoothie Bowl

Smoothie
150g Frozen Mango Chunks (alternatively use fresh mango and a handful of ice)
2 slices tinned Pineapple
1/2 Banana
4 Tbsp Coconut Yoghurt

Toppings
Coconut Chips
1/2 Banana, sliced
Pumpkin Seeds
Dried Pineapple

Blitz together all the smoothie ingredients in a blender, smoothie maker or stick blender. Add a splash of the pineapple juice or water if it's too thick.
Pour into a bowl and decorate with your toppings.
Grab a spoon and enjoy.

  3. I definitely prefer thicker smoothies that you can eat with a spoon, it's somehow more satisfying and makes me feel more full because I feel like i'm eating something rather than drinking it. This smoothie bowl looks delicious! Banana and mango are my 2 favourite ingredients to add to smoothies :D

  4. Oh, I do love mango smoothies and I bet it was really tasty with the addition of pineapple too. I find a smoothie bowl feels much more like a "real" breakfast, mostly because you have to sit down to eat it.

  6. I keep meaning to make a smoothie bowl too and haven't gotten around to it either. It's definitely on my to-do list for this year - they're just soon pretty aren't they! I love the combination of flavours you've added to yours, so lovely and tropical.

    I need to master macarons too, mine look nice but flatly refuse to leave the tray they've welded themselves too (and I did use a non stick sheet). I'm hoping to book myself on a macaron masterclass soon so hopefully I'll figure it out.

  7. Oooh I do love a smoothie but I have never tried a smoothie bowl! Coconut milk & yoghurt are great dairy/soya free alternatives for making smoothies!

    As for Macarons - they are so easy to make you definitely have to try! WOuld definitely recommend Bake-o-glide to line the baking tray its the only one I have found that doesn't stick to them! Agree about the slow cooker cakes - they are on my list for this year too!! My friend makes an amazing one with a chocolate cake mix box & a can of coke!
