Autumnal Meal Planning Monday

Crikey there's a nip in the air. Well there was on Friday but Sunday saw a return to the promised Indian Summer. Not quite sure if Autumn knows what its doing. Most of last weeks Meal Plan got made although the Fritata was bumped in favour of a quick fridge raid as we dashed out to a Beetle Drive. First up was a three cheese and summer vegetable bake. Worked really well with tatties and peppers from our garden plus courgettes, ricotta, mozarella and parmesan. I added the courgette flowers as a final cheffy flourish.
Nae affa pretty to look at but the Stornoway Black Pudding potato cakes were so fine. A leftover one for breakfast was even better. Rough quantities for 8 cakes were

600g cold mashed potato
4 generous slices of black pudding cubed
4 chopped spring onions 
bunch of snipped chives. 
Combine and shape into cakes (I use a burger press) Fry for aprox 5 mins on each side until crispy. 

Amazing colour in the Scandanavian style pork meatballs with roasted beetroot. Fab flavours too from the dill and sour cream. I actually used a mixture of traditional and golden beets which worked well.
A Wednesday night walk turned into a Bramble pick and the biggest and juiciest ones were transformed into Mini Bramble Bakewells. So tasty. May well have to make another batch before the season is over.

Saturday heralded the start of Scottish Food Fortnight. Certainly plenty of fantastic Scottish produce will be featuring on my menu this week. What about yours? Lots of events are taking place across the country as part of the fortnight. Check out the listings on www.scottishfoodanddrinkfortnight.co.uk to see whats close to you. We'll certainly be heading to The Store on Sunday for their Harvest Home Open Day. I might even get a shot on the combine.

  3. Very interesting food here. Last week's summer veg bake looked wonderful and a good idea to use up the courgette flowers. Also the mini bramble bakewells look super. Interested to know how your blackpudding pizza works out.
