A week with the Hairy Dieters

Another week another meal plan #mealplanningmonday Last weeks Slimming Word meals went well and I'm happy to report a 2lb loss. I pretty much followed my plan to the letter but didn't realise that my Feast of Fish evening class started back so the planned salmon dish was bumped in favor of Sole Goujons with homemade Tartare Sauce, mushy peas and Slimming World Chips. The Chicken and Mushroom Pie was probably my favourite of the week closely followed by the Mango Glazed Chicken.

This week, all bar one meal, I'm utilising recipes from one of my Christmas Pressies. The Hairy Dieters cookbook. I watched the TV series as it was being broadcast and thoroughly enjoyed it. Boy and myself also went to see them in the flesh (literally) Larger than Live. I've previously cooked the Sweet and Sour Chicken and it was really good but all the others are new to me. The two dishes which they made in the series are available online. You'll need the How to Love Food and Lose Weight cookbook for the others.

Wednesday - Minestrone Soup
I have never made minestrone soup before but boy has requested it as its one of his favourites on the school dinner menu. I hope my attempt is as good as Dorothy's. Also have the Pinnies and Petticoats cake club baby shower themed meet up tonight so need to leave room for lots of cake (bang goes the diet!)
Thursday - Salmon with Chilli ginger sauce
Salmon marinaded in stem ginger and its syrup with garlic, soy, lemon, orange and chilli
Friday - Arbroath Smokie Croquettes with a Beetroot Relish
This is what I'll have made at my Thursday night Feast of Fish Class
Saturday - Spanish style chicken bake
Chicken thighs, chorizo, potatoes, onion, tomatoes, peppers and garlic tray baked with spanish spices.
Sunday - Lean lamb hotpot
Slow cooked lamb and veg topped with a sliced potato crust

  3. Most of the recipes in that book can be easily adapted to be SW friendly. I have made the pie using pizza dough instead of pastry and it was yummy and certainly soothed a pie craving
